The evolution and innovation of pizza
Located in Fumane since 2008, nestled in the rolling hills of Valpolicella, Pizzeria Valle dei Mulini embodies the perfect blend of tradition and innovation. Here, simple, seasonal ingredients of the highest quality are carefully selected and prepared daily. Many of these are D.O.P. or I.G.P. certified, and local products that celebrate the flavors of the region are present as well. Standout items include truffle, Grana cheese, and craft beers, all proudly produced in Lessinia.
The base dough is made following traditional methods, specifically the indirect Poolish technique, which dates back to the 1700s. Using minimal yeast, organic “Type 0” flour, and water, a starter is prepared and left to ferment for about 10 hours at room temperature. The dough is then completed with more organic “Type 0” flour, a pinch of iodized salt, extra virgin olive oil, and left to rest for a couple of hours. Afterward, the dough is divided into individual portions and matured for 72 hours under controlled conditions.
This meticulous process results in doughs that are flavorful, fragrant, perfectly leavened, and easy to digest, satisfying every palate with pizzas ranging from traditional to gourmet, and even dessert options. Vegetarian and vegan pizzas are thoughtfully crafted to highlight the simplest flavors.
The menu also features seasonal offerings such as pumpkin or zucchini cream, all homemade and paired with creative Limited Edition items that make every visit a unique experience. Two exclusive pizzas add a touch of originality to the menu, catering to the most curious and adventurous diners. The Strupizza®, shaped like a strudel, and the Fagotto®, resembling a crab and combining elements of a starter and a calzone, bring an inventive twist to traditional pizza.
