Ca’ da Roman presents Italian sparkling wines from resistant vines
The Ca’ da Roman winery is located in Italy, not far from Venice, at the foot of the UNESCO MAB (Man and Biosphere) Reserve of Monte Grappa, in Romano d’Ezzelino (Vicenza). In these lands rich in traditions, the organic farm Ca’ da Roman cultivates seven hectares of PIWI resistant grape varieties, aiming to enhance biodiversity to recreate, through regenerative agriculture, the perfect balance between man and nature with vegetable gardens, orchards, olive groves, cereals, monumental plants, and honey hedges.
Favored by an ideal microclimate for vine cultivation, Ca’ da Roman produces 40,000 to 50,000 bottles per year exclusively from wines varieties resistant to the most common fungal diseases: Souvignier Gris, Johanniter, Bronner, Regent, and Cabernet Eidos. These wines have a low ecological footprint, with a 40% reduction in carbon footprint and a 70% reduction in water footprint.
Ecelo I, 30° Pure Love, and Zeromax are the three proposals from Ca’ da Roman for those who appreciate high-quality Italian sparkling wines, produced by selecting the best organic grapes with meticulous attention and adopting a carefully managed process at every stage, from vineyard to bottle.
ECELO I is the classic method sparkling wine from PIWI Souvignier Gris grapes, “zero chemicals,” with 24 months of aging on the lees. It has a clear straw yellow color with golden hues, an intense and persistent bead, and on the palate offers sensations of fruit and citrus with elegant and clean sips.
For its unique characteristics, Ecelo I won the Excellence Award at the prestigious Falstaff Online Tasting 2024. 30° Pure Love is the attractive and satisfying rose sparkling wine made with the Charmat method, with a fine and pleasant bead and aromas that make the fruit and the elegant vinosity their strengths. Pure Love comes from Cabernet Eidos/Regent vineyards, aged in steel for 6 months and re-fermented in an autoclave for 60 days.

Produced from the best blend of two resistant PIWI varieties grown organically: Bronner and Johanniter, Zeromax is the first PIWI de-alcoholized wine created in Italy, extracting the alcohol from normally produced wine through a method that does not use any chemicals, then added with foodgrade CO2 and slightly sweetened with its own must.
