Discovering wines from resistant grape varieties at Ca’ da Roman
Ca’ da Roman winery is located in Italy, not far from Venice, at the foot of the UNESCO MAB (Man and Biosphere) Reserve of Mount Grappa, in Romano d’Ezzelino (Vicenza). In these lands rich in traditions, the organic farm Ca’ da Roman cultivates seven hectares of resistant PIWI grapevines, aiming to enhance biodiversity and recreate, through regenerative agriculture, the perfect balance between man and nature.
Benefiting from a microclimate ideal for vine cultivation, Ca’ da Roman produces 50,000 bottles per year exclusively from grape varieties resistant to the most common fungal diseases. These wines have a low ecological footprint, with a 40% reduction in carbon footprint and a 70% reduction in water footprint. Ecelo I, 30°- Pure Love, Maria Pia Viaro, and Zeromax are Ca’ da Roman’s offerings for those who appreciate highquality Italian wines: ECELO I is the sparkling wine made with the classic method from ‘zero-chemicals’ PIWI Souvignier Gris grapes, aged for 24 months on the lees.
It has a clear straw-yellow color with golden hues, an intense and persistent perlage, and on the palate, it offers sensations of fruit and citrus. For its unique characteristics, Ecelo I stood out with 92 points at the prestigious Falstaff Online Tasting 2024. 30° – Pure Love is an attractive and satisfying rosé sparkling wine crafted using the Charmat method. It features a fine and pleasant perlage, with aromas where fruity notes and elegant vinosity are its hallmarks. Pure Love is made from Cabernet Eidos and Regent grape varieties, aged in steel for 6 months, and refermented in an autoclave for 60 days. Maria Pia Viaro is a still rosé wine, made from Regent and Cabernet Eidos grapes, aged for 12 months in steel.
Subtle in color and gentle in character, this wine, which evokes aromas of flowers and summer fruits, accompanies unique taste experiences with its strong identity, perfect for moments of true elegance. Zeromax is a non-alcoholic Dry and Extra-dry beverage. Ideal for those who do not consume alcohol, it is perfect for a toast with a fine and delicate fragrance, with hints of apple and orange blossoms. It is made from the best blend of two resistant PIWI varieties grown organically: Bronner and Johanniter, Zeromax is the first de-alcoholized PIWI wine born in Italy.
The alcohol is extracted from the normally vinified wine through a method that does not involve the use of any chemicals, then it is enriched with food-grade CO2 and lightly sweetened with its own must. These wines are the result of responsible viticulture and the ideal choice for toasting in respect of nature and its precious fruits.
