ANTINÈ BISTROT

A culinary journey in the heart of Barbaresco

Nested in the heart of Barbaresco, one of Italy’s premier wine capitals, Bistrot Antinè seamlessly blends tradition and innovation, offering a gastronomic journey that emphasizes simplicity and allows each ingredient to shine. Deeply influenced by the picturesque surroundings, Bistrot Antinè provides a fairy-tale backdrop that enriches the dining experience for guests. The restaurant takes its responsibility to represent the region’s complex culinary traditions seriously, especially given the international audience that visits Barbaresco.

This setting profoundly influences the culinary experience at Bistrot Antinè. Bistrot Antinè is committed to showcasing the culinary complexity of the region to a global audience, drawing inspiration from the richness offered by the vibrant local landscape. Indeed, the colors of the surrounding panorama inspire the dishes, reflecting seasonal changes and the dynamic palette of the region. In simple terms, Bistrot Antinè is an emblem of modern Piedmontese cuisine.

The concept of Bistrot Antinè was born from Chef Manuel Bouchard’s desire to create a space that reflects his culinary journey and personal vision, after honing his skills in prestigious Italian restaurants such as Villa Crespi, Piccolo Lago, and Trussardi alla Scala. Since the beginning, in early 2014, the restaurant has remained committed to sourcing high-quality local ingredients and combining them in modern and creative ways.

The philosophy of Bistrot Antinè revolves around celebrating the rich agricultural heritage of the Piedmont region. The chef meticulously selects ingredients from small, local producers who embody the cultural and culinary legacy of the area. These ingredients are then elevated with intelligence, respect, and sensitivity, ensuring each dish showcases the best of what the region has to offer.

The culinary approach prioritizes maintaining the natural flavors of the ingredients, in a continuous culinary pursuit to keep tastes distinct and clear. Thus, the cuisine blends tradition and modernity, avoiding overly technical or avant-garde methods in favor of simple techniques that highlight the best qualities of the ingredients. In addition to its culinary excellence, Bistrot Antinè is renowned for its extensive wine selection.

Integral to the culinary experience, the wine cellar houses approximately 1,300 labels from around the world, including rare and precious bottles. Barbaresco wines are a focal point, representing over a third of the collection with a wide range of vintages. This extensive selection perfectly complements modern Piedmontese cuisine, for an unparalleled culinary experience, making Antinè an unmissable stop on your journey through Italy!
